On the night of Monday, January 11, 2021, German vintners were able to bring in grapes frozen at up to minus ten degrees for the production of ice wine. This is reported by the German Wine Institute (DWI). Among them, there are the Fellbacher Weingärtner in Württemberg, who were able to harvest Riesling and Spätburgunder grapes with more than 160 degrees Oechsle each, the Bergsträßer Winzer from the Hessische Bergstrasse and the Theisen wine estate on the Mosel, both of which brought in ice wine grapes of the fungus-resistant Souvignier gris grape variety.

Before, on the clear full moon night on November 30, wine regions on the Nahe, the Mosel, in Rheinhessen, in the Palatinate, in Franconia or in the Rheingau, some vintners had successfully harvested frozen ice wine grapes at frosty temperatures.

According to the DWI, this early timing for the ice wine harvest is very conducive to wine quality, as the grapes for ice wine production should be as healthy as possible.
