The Guide Michelin has published its new star ratings for Germany. Jan Hartwig's "Jan" in Munich, which opened only six months ago, is a restaurant that has achieved three stars from a standing start. Hartwig had previously achieved three stars at the Atelier restaurant in the Bayrischer Hof Hotel. The guide calls this fast start a "sensation" and praises: "Jan Hartwig masters craft and technique to perfection and sometimes dares to do something unexpected. The variation of products and flavours is fantastic - international top level is offered here." A second spectacular newcomer is also located in Munich: The "Alois - Dallmayr Fine Dining" also made it to two stars from a standing start after its reopening under the kitchen management of Max Natmessnig.

The other nine three-star restaurants in Germany are the "Schwarzwaldstube" and the "Restaurant Bareiss" in Baiersbronn, the "Rutz" in Berlin, the "Waldhotel Sonnora" in Dreis, "The Table Kevin Fehling" in Hamburg, "Victor's Fine Dining by Christian Bau" in Perl, the "Schanz" in Piesport, the "Überfahrt Christian Jürgens" in Rottach-Egern and the "Aqua" in Wolfsburg. With 50 two-star restaurants and 274 one-star restaurants, the record number of 334 award-winning establishments was reached. Eight of them are new to the two-star list, 34 did not yet bear a star last year.

The Guide Michelin praises German gastronomy for this "impressive success after difficult times. Many, mostly young chefs have shown enormous courage and dared to take the step into self-employment. Despite the omnipresent shortage of skilled workers, they do not compromise on quality in their often small restaurants."
