The Italian Prosecco producer Follador presents its first "Brut nature" Prosecco at Prowein. The "Brut Nature Millesimato Pas Dosé" is produced using the "Gianfranco Follador method" patented by the winery. During fermentation, the grapes are cooled with a protective gas. This also removes unwanted oxygen from the surface of the grapes in order to suppress undesirable oxidation processes. According to Follador, this process also reduces the sulphur content of the Prosecco by around 30 per cent.

The Prosecco producer had been the first to experiment with the "Kyros" production method under protective gas since 2015. Since 2017, this technology has been used in the entire portfolio, Follador announced. The company is preparing for the modern production method to be used by other wineries in the near future.
