The German Wine Institute (DWI), together with the Sommelier Union, has organised an "online training camp" for restaurateurs and wine professionals. From 23 to 27 November, there will be an online conference with sommeliers, vintners, journalists and wine experts every day at 11 am. They will discuss the classics of today and the wine trends of tomorrow.

The topics and dates:

23.11.: Food and wine: How and what do colleagues recommend? Sebastian Bordthäuser, the currently best German sommelier Maximilian Wilm as well as the sommelier of the year in the "Gault Millau 2020", Nina Mann, discuss wine and food with DWI seminar leader Manuel Bretschi.

24 Nov: Silvaner 4.0: A traditional grape variety is picking up speed: Although the area under vines away from Franconia has been declining for years, the wines have nevertheless moved back into the focus of experts. Moreover, Silvaner is still a star in food pairing. With us: Romana Echensperger (Master of Wine), Jens Windisch (Weingut Werther Windisch), Sebastian Schütz (Rot Weiß Rosé) and Manuel Bretschi (DWI).

25 Nov: Germany and its red wine cuvées are still partially undiscovered. German winemakers and producers now also know how to handle assemblage. The participants will taste exciting cuvées blind and discuss blending partners and possible uses.

26 Nov: Climate change or not - even red wines with a maximum of 12.5 percent alcohol have their justification. Trollinger, Portugieser, Pinot Noir and Black Riesling are in the lead for the DWI. With us: Martin Kössler (K & U - Die Weinhalle) and Manuel Bretschi (DWI).

27 Nov: What are the trends of tomorrow? "Vegan" and "orange" in wine and "Hawaiian bowls and ceviche" in food were yesterday. The experts discuss and speculate on the topics that will occupy restaurateurs and wine lovers in the future. Among them: Ralf Bos (Bosfood) and Manuel Bretschi (DWI).

Participants must register if they want to actively take part and ask questions. At the same time, the video can be watched live without registration via Facebook and Youtube.
