Sales of wines by the glass have increased by 25 per cent in France's catering establishments in 2022 compared to the previous year. This is reported by Bernard Boutboul, managing director of the market research company Gira Conseils, specialised in hotels, restaurants and cafés. Thus, three quarters of all wines in the French gastronomy are sold by the glass. In the same period, the sale of bottles and half-bottles has decreased by 15 percent.

Boutboul reports a "surge of consumption in gastronomy" since it was allowed to reopen after the Covid 19 restrictions in May 2021. Guests had spent more money on restaurant visits, especially on desserts and wines. Total wine sales nevertheless remained about the same, but the trend towards more consumption by the glass is likely to continue.
