An AI (artificial intelligence) system from US start-up Tastry that helps winemakers select the right tanks in the cellar for a cuvée is coming to Europe in 2021. "Tastry" uses artificial intelligence (AI) to analyse tens of thousands of wines per year. In doing so, it generates very large amounts of data. According to the company, the system identifies several thousand chemical compounds that result in the taste profile of a wine. It also compares aroma, texture and colour with other wines in the database. This is to avoid the individual inaccuracies that founder Katerina Axelsson has found in wine evaluation by humans. She already works with winemakers in the US, helping them blend wines that are often assembled from dozens of tanks or barrels. "Tastry doesn't replace winemakers," Axelsson points out, "but it helps to get the desired results more quickly by suggesting the most appropriate batches."

Conversely, consumers can receive suitable recommendations by specifying some taste preferences. The hit rate is over 80 per cent and can be increased by adding more information. Axelsson has also tested beer, coffee, spirits and fragrances with it. She has announced that she will launch her product in Europe later this year. As a first step, she says she is initially cooperating with a large European online wine shop to help consumers make their selection with the system.
