The Born winery in the Saale-Unstrut growing region has harvested the first ice wine of the 2018 vintage. However, the Gewürztraminer, which was harvested at minus seven degrees, is not for sale. It is used as a dosage in a sparkling wine of the same grape variety, which the winery produces as "Pétillant Naturel".

"This already ferments in the bottle," explains winemaker Jochen Born from Höhnstedt. The special thing about Pétillant Naturel is that it is not produced by a second fermentation, but is bottled as a fermenting must with carbon dioxide. As a rule, it is sold in its natural state, without removal of the yeast, and is not disgorged. In this case, the sparkling wine is disgorged after nine months of bottle fermentation, and the Gewürztraminer ice wine that has been harvested is used as a dosage for adjusting the taste of the fermented sparkling wine.
