What are tertiary aromas?
Tertiary aromas emerge during ageing: due to the chemical transformation during bottle ageing, new aromas emerge again after longer storage, such as the typical maturity notes in red wines (nuts, earth, damp leaves), the petrol tone in matured Rieslings or - in the negative case - oxidation and firn notes; the latter are signs of ageing.
