The umbrella organisation Consejo Regulador de Cava has announced that all top wines in the categories Reserva, Gran Reserva and Paraje Calificado Cavas will be produced 100 per cent organically by 2025. This decision is intended to advance the appellation's quest for quality. Only recently, a yeast storage period of at least 18 months was introduced for Cava with the additional designation Guarda Superior. Furthermore, the vines must have a minimum age of ten years, and the maximum yield was limited to 10,000 kilos of grapes per hectare. The wineries are obliged to guarantee traceability from harvest to bottle.

The appellation has thus given itself "the most demanding production rules in the world" for bottle-fermented quality DO sparkling wines, said the president of the DO Cava, Javier Pagés. One wants to take into account the increasing consumer demand for ecologically sustainable products, Pagés added.
