Didier Berthollier from the Domaine la Combe des Grand'Vignes in Chignin in the Vin de Savoie wine-growing region displays the sulphite concentrations measured by a laboratory for each bottling on all the back labels of his wines. By his own account, this makes him the first winery in the world to do so. "Personally, I've never seen anyone do this before," Berthollier told the online magazine Vitisphère. He cultivates twelve hectares, his farm is in the conversion phase of organic certification. The wines of the Domaine la Combe des Grand'Vignes are vinified without sulphur until bottling and therefore manage with low sulphite additions. Berthollier compares the sulphur concentrations of his wines with the legal limits for organic, biodynamic wines as well as the guidelines of the Association des Vins Naturels. "We decided to put things clearly in order to give our consumers all the information they need," Berthollier explained. Above all, sommeliers and wine merchants are happy if they can verify information from the winemakers, he said.
