Château Sigalas-Rabaud in Sauternes is the first Bordeaux winery classified as Premier Grand Cru to bring a de-alcoholized wine to market. Starting on Valentine's Day (February 14), the Sigalas-Rabaud x Moderato will be available for 29.90 euros per bottle. Moderato is the Paris-based specialist for de-alcoholized wines, whose technology removes alcohol using vacuum distillation.

The base of the wine is the 2024 vintage. It consists of 100 percent Sémillon grapes and comes from barrels that were otherwise intended for the Grand Vin. However, it was aged in oak barrels for six months less. The residual sugar content is 85 grams per liter. According to the British trade magazine Drinks Business, the wine is characterized by a "feeling of density and viscosity on the palate." The flavor structure arises from the tension between acidity and residual sugar. It conveys a much stronger impression of a classic Sauternes than that of a non-alcoholic wine.
