The Champagne house Champagne Bollinger ***** is facing a change at the top of winemaking: Chief Oenologist Denis Bunner is leaving the house to become self-employed. This is reported by French media as well as the German author Stefan Pegatzky. No statement from Bollinger has been made so far.
Currently, Bunner is advising the Technical Service and the Environmental Service of the Comité Champagne. The graduate from an Alsatian winemaker family, who studied at AgroTech Paris and ESSC Business School, began his career in 2002 at the Comité Champagne, where he worked for eleven years. In 2013, Bunner moved to Bollinger after the departure of Mathieu Kauffmann and became Deputy Cellar Master under Gilles Descôtes. Five years later, he also took over the management of the house's research department. After Descôtes' death, Bunner was appointed responsible Cellar Master in 2023.
The departure comes at a sensitive time for Bollinger. The house is currently preparing for its 200th anniversary and is simultaneously pursuing a comprehensive modernization program. A new winery was opened in April 2026.
