What does Trockenbeerenauslese mean?
In Germany,Trockenbeerenauslese is the fifth of six predicate levels within the quality system. The grapes for a Trockenbeerenauslese must have a minimum must weight of 150 to 154 degrees Oechsle, depending on the growing region. Apart from this, the wine must fulfil the criteria of the quality wine category. Trockenbeerenauslese wines are exclusively sweet or sweet. The grapes must be overripe and noble rotten, i.e. infected by the noble fungus Botrytis cinerea, so that they have dried up like s ultanas.
In Austria, the noble rotten, shrivelled grapes must have a minimum must weight of 30 degrees KMW for wines with the predicate Trockenbeerenauslese. Trockenbeerenauslese wines here are also always noble sweet.
