What does Beerenauslese mean?
Beerenauslese is the fourth of six predicate levels within the quality system in Germany. The grapes for a Beerenauslese must have a minimum must weight of 110 to 128 degrees Oechsle, depending on the growing region. Apart from this, the wine must fulfil the criteria of the quality wine category. Beerenauslese wines are almost exclusively sweet or sweet. The grapes can be at least partially noble rotten, i.e. infected by the noble fungus Botrytis cinerea.
In Austria, the overripe and/or noble rot grapes must have a minimum must weight of 25 degrees KMW for wines with the predicate Beerenauslese. Beerenauslese wines are always vinified with residual or noble sweetness.
