Which wine goes with paella?
Paella is a versatile pan-fried dish from Spain's east coast that comes in variations with rice, vegetables, meat and/or seafood. The wine must be just as versatile.
In keeping with the origin of the dish, a dry wine from Spain is a good choice, and both white and red wines are possible. These can be national or international grape varieties - for white wine, for example, Verdejo as Spanish or Chardonnay or Sauvignon Blanc as international varieties, for red wine e.g. Tempranillo, Monastrell or Garnacha as Spanish or Merlot or Syrah as international varieties. Wines from other, preferably southern European countries such as France, Italy or Greece are also possible, and a cuvée of some of the varieties mentioned or others is undoubtedly a good choice.
